Beef Stew
Ingredients
- 2.5 pounds pot roast, cut into 1 inch cubes
- olive oil
- 2 teaspoon salt
- 2 teaspoon pepper
- 4 tablespoons Worcestershire Sauce
- 6 garlic cloves, minced
- 3 large onion, chopped
- 1.5 pounds carrots, chopped
- 1.5 Pound Potatoes, cubed
- 4 cups beef broth
- 15 ounce can tomato sauce
- 4 tablespoons cornstarch
- 4 tablespoons water
Steps
- Season meat with the salt and pepper
- Sear meat in batches in instant pot using saute function. Use olive oil.
- Remove beef
- Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
- Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
- Close the lid and steam valve on the instant pot.
- Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
- Mix together the cornstarch and cold water in a small bowl and stir into the stew until thickened.

Notes: I tried to double the recipe as suggested, but it didn’t fit in the Instant Pot. So I had to take out some carrots and potatos.
