Black Bean Stew
Ingredients:
- olive oil
- 3 large onions, chopped
- 3 tablespoon ground cumin
- 9 cloves garlic minced
- 6 (14 1/2 ounce) cans black beans
- 6 cups chicken broth
- salt and pepper
Steps
- Saute onion in olive oil.
- When onion becomes translucent, add cumin.
- Cook 30 seconds, then add garlic and cook for another 30 to 60 seconds.
- Add 1/2 of the black beans and all of the broth.
- Bring to a simmer, stirring occasionally.
- Turn off heat.
- Blend using immersion blender.
- Add the rest of beans to the pot along with blended ingredients and bring to a simmer.
Notes: 8 servings and this is super fast to make. Freezes well. This is triple the original recipe, which is like 2.5 servings for some reason.
